99);\"\u003eそして流石だな、と思ったのが、ライム（季節限定で「ゆずきち」という山口県の伝統果実に変わるときもあります）の使い方。普通ならほのかに味付けに使うために小さく刻んで入れたり、果汁を使ったりするところを、あえて大きめなスライスで数切れだけ入れているところ。食べ進めていると、たま〜に、ボカンと清涼感と酸味と苦味の爆弾が口の中で爆発します。味の変化自体がたまらないのですが、さらにすごいなと思うのが、その爆弾が味覚のリセットを行い、次のひとくちがまた新鮮なものとして味わい直せること。ひとさらの中に味の変化を生み出す技術。小さなことなんですが、ほんとによく考えているな〜と。\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan
